- 2 lb chuck roast
- 1 cup barbecue sauce
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup beef broth
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- Buns for serving
Instructions
- Trim excess fat from the chuck roast and season generously with salt, pepper, and spices.
- In a hot skillet, sear the roast for 2–3 minutes on each side until browned.
- Place the seared roast in a slow cooker and pour over the barbecue sauce, chopped onions, and minced garlic.
- Add beef broth just enough to keep it moist.
- Set the slow cooker to low and cook for 8–10 hours or on high for 4–6 hours.
- Once cooked, shred the beef with two forks and mix back into the sauce.
- Serve on buns garnished with coleslaw, pickles, or extra barbecue sauce.
Notes
For a leaner option, substitute chuck roast with sirloin or brisket. You can also use turkey or jackfruit for a vegetarian variation.
