Ingredients

  • 1 cup barbecue sauce
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • Buns for serving

Instructions

  1. Trim excess fat from the chuck roast and season generously with salt, pepper, and spices.
  2. In a hot skillet, sear the roast for 2–3 minutes on each side until browned.
  3. Place the seared roast in a slow cooker and pour over the barbecue sauce, chopped onions, and minced garlic.
  4. Add beef broth just enough to keep it moist.
  5. Set the slow cooker to low and cook for 8–10 hours or on high for 4–6 hours.
  6. Once cooked, shred the beef with two forks and mix back into the sauce.
  7. Serve on buns garnished with coleslaw, pickles, or extra barbecue sauce.

Notes

For a leaner option, substitute chuck roast with sirloin or brisket. You can also use turkey or jackfruit for a vegetarian variation.
