Ingredients

  • 1 chuck roast (about 34 lbs)
  • 1 cup BBQ sauce
  • 1 yellow onion, chopped
  • 4 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • 1 tsp black pepper
  • 1 cup beef broth
  • 2 tbsp apple cider vinegar

Instructions

  1. Trim excess fat from the chuck roast and rub spice blend all over.
  2. Heat a skillet over medium-high heat, sear the beef on all sides for 3-4 minutes.
  3. Sauté chopped onions and minced garlic in the same skillet until soft, about 5 minutes.
  4. Place the seared beef in the slow cooker, add onions, garlic, BBQ sauce, beef broth, and apple cider vinegar.
  5. Cover and cook on low for 8 hours or high for about 4 hours.
  6. Once the meat shreds easily with a fork, remove, let cool slightly, shred, and mix back with the juices.
  7. Serve on soft buns with toppings like coleslaw or pickles.
