- 1 chuck roast (about 3–4 lbs)
- 1 cup BBQ sauce
- 1 yellow onion, chopped
- 4 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper
- 1 tsp black pepper
- 1 cup beef broth
- 2 tbsp apple cider vinegar
Instructions
- Trim excess fat from the chuck roast and rub spice blend all over.
- Heat a skillet over medium-high heat, sear the beef on all sides for 3-4 minutes.
- Sauté chopped onions and minced garlic in the same skillet until soft, about 5 minutes.
- Place the seared beef in the slow cooker, add onions, garlic, BBQ sauce, beef broth, and apple cider vinegar.
- Cover and cook on low for 8 hours or high for about 4 hours.
- Once the meat shreds easily with a fork, remove, let cool slightly, shred, and mix back with the juices.
- Serve on soft buns with toppings like coleslaw or pickles.
