- 4 Russet or Yukon Gold potatoes, diced
- 1 yellow onion, diced
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups low-sodium vegetable or chicken broth
- 1 cup cream or half-and-half
- 2 tablespoons Cajun seasoning
- 2 bay leaves
- 2 tablespoons butter
- Fresh parsley, for garnish
Instructions
- Dice the potatoes, onions, carrots, and celery into bite-sized pieces.
- In a skillet, melt the butter over medium heat. Sauté the onions, carrots, and celery until softened, about 5-7 minutes.
- Transfer the sautéed vegetables into your slow cooker, layering in the diced potatoes.
- Sprinkle Cajun seasoning over the vegetables and toss to distribute.
- Add minced garlic and pour in the broth until all ingredients are submerged.
- Add bay leaves and a few dashes of hot sauce, if desired.
- Stir in the cream or milk before covering.
- Set the slow cooker to low for 6-8 hours or high for 3-4 hours.
- 30 minutes before serving, taste for seasoning and adjust if needed, then remove bay leaves.
- Serve hot, garnished with fresh parsley.
