  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups low-sodium vegetable or chicken broth
  • 1 cup cream or half-and-half
  • 2 tablespoons Cajun seasoning
  • 2 bay leaves
  • 2 tablespoons butter
  • Fresh parsley, for garnish

Instructions

  1. Dice the potatoes, onions, carrots, and celery into bite-sized pieces.
  2. In a skillet, melt the butter over medium heat. Sauté the onions, carrots, and celery until softened, about 5-7 minutes.
  3. Transfer the sautéed vegetables into your slow cooker, layering in the diced potatoes.
  4. Sprinkle Cajun seasoning over the vegetables and toss to distribute.
  5. Add minced garlic and pour in the broth until all ingredients are submerged.
  6. Add bay leaves and a few dashes of hot sauce, if desired.
  7. Stir in the cream or milk before covering.
  8. Set the slow cooker to low for 6-8 hours or high for 3-4 hours.
  9. 30 minutes before serving, taste for seasoning and adjust if needed, then remove bay leaves.
  10. Serve hot, garnished with fresh parsley.
