- 1 lb Ground Beef (or Lamb)
- 8 oz Fresh Mushrooms, sliced
- 1 Onion, diced
- 2 cloves Garlic, minced
- 2 Carrots, diced
- 1 cup Peas
- 4 cups Mashed Potatoes
- 1 cup Cheese, shredded (Cheddar recommended)
- 1 cup Beef or Vegetable Broth
- Salt and Pepper, to taste
- Fresh Herbs (Thyme, Rosemary, Parsley)
Instructions
- Sauté onions and garlic in olive oil until fragrant.
- Add ground beef and brown thoroughly; season with salt, pepper, and herbs.
- Stir in mushrooms, carrots, and peas; cook until mushrooms are tender.
- Transfer mixture into a slow cooker; add broth and mix well.
- Prepare mashed potatoes and spread over the meat and vegetable mixture.
- Cook on low for 6-8 hours or high for 3-4 hours.
- In the last 30 minutes, sprinkle extra cheese on top of potatoes to melt.
- Serve warm and enjoy!
Notes
For a lighter option, substitute ground beef with ground turkey or a meat alternative. Use homemade or store-bought mashed potatoes for convenience.
