Ingredients

  • 1 lb Ground Beef (or Lamb)
  • 8 oz Fresh Mushrooms, sliced
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 2 Carrots, diced
  • 1 cup Peas
  • 4 cups Mashed Potatoes
  • 1 cup Cheese, shredded (Cheddar recommended)
  • 1 cup Beef or Vegetable Broth
  • Salt and Pepper, to taste
  • Fresh Herbs (Thyme, Rosemary, Parsley)

Instructions

  1. Sauté onions and garlic in olive oil until fragrant.
  2. Add ground beef and brown thoroughly; season with salt, pepper, and herbs.
  3. Stir in mushrooms, carrots, and peas; cook until mushrooms are tender.
  4. Transfer mixture into a slow cooker; add broth and mix well.
  5. Prepare mashed potatoes and spread over the meat and vegetable mixture.
  6. Cook on low for 6-8 hours or high for 3-4 hours.
  7. In the last 30 minutes, sprinkle extra cheese on top of potatoes to melt.
  8. Serve warm and enjoy!

Notes

For a lighter option, substitute ground beef with ground turkey or a meat alternative. Use homemade or store-bought mashed potatoes for convenience.
