Ingredients

  • 1.5 lbs Beef Chuck Roast
  • 24 Chipotle Peppers in Adobo Sauce (to taste)
  • 2 Bell Peppers, chopped
  • 1 cup Sweet Corn
  • 1 Onion, diced
  • 2 cups Beef Broth (or Vegetable Broth)
  • 1 tsp Cumin
  • 1 tsp Garlic Powder
  • 1 tsp Paprika
  • 2 cups cooked Rice or Quinoa
  • Fresh Cilantro, for garnish
  • Cheese and Sour Cream, for topping (optional)

Instructions

  1. Trim excess fat from the chuck roast and season with salt, pepper, cumin, and garlic powder.
  2. (Optional) Sear the beef on medium heat for 3-4 minutes per side until browned.
  3. Place the seared beef in the slow cooker and add bell peppers, corn, and onions.
  4. Pour chipotle sauce and beef broth over the mixture and stir gently.
  5. Cover and cook on low for 8 hours or high for 4-5 hours.
  6. Shred the beef with two forks and return to the slow cooker; serve over rice or quinoa with garnishes.
