- 1.5 lbs Beef Chuck Roast
- 2–4 Chipotle Peppers in Adobo Sauce (to taste)
- 2 Bell Peppers, chopped
- 1 cup Sweet Corn
- 1 Onion, diced
- 2 cups Beef Broth (or Vegetable Broth)
- 1 tsp Cumin
- 1 tsp Garlic Powder
- 1 tsp Paprika
- 2 cups cooked Rice or Quinoa
- Fresh Cilantro, for garnish
- Cheese and Sour Cream, for topping (optional)
Instructions
- Trim excess fat from the chuck roast and season with salt, pepper, cumin, and garlic powder.
- (Optional) Sear the beef on medium heat for 3-4 minutes per side until browned.
- Place the seared beef in the slow cooker and add bell peppers, corn, and onions.
- Pour chipotle sauce and beef broth over the mixture and stir gently.
- Cover and cook on low for 8 hours or high for 4-5 hours.
- Shred the beef with two forks and return to the slow cooker; serve over rice or quinoa with garnishes.

Always taste before serving and consider adding a dash of lime juice for extra brightness.
