Ingredients

- 2 lbs beef chuck roast or stew meat, cut into bite-sized pieces
- 2 lbs Yukon Gold or red potatoes, washed, peeled, and chopped
- 6 cloves garlic, minced
- 1/2 cup salted butter, melted
- 2 cups beef or vegetable broth
- 1 tsp fresh thyme, chopped (or 1/3 tsp dried)
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Prep the beef by cutting it into equal-sized pieces.
- Optionally, sear the beef bites in a skillet over medium-high heat for added flavor.
- Add the chopped potatoes into the slow cooker as the base.
- Create a garlic butter mixture by combining melted butter, minced garlic, herbs, and seasoning in a bowl.
- Pour the garlic butter mixture over the beef and potatoes in the slow cooker.
- Pour broth over the ingredients, covering them just enough.
- Slow cook on low for 6-8 hours or high for 4-5 hours.
- Adjust seasoning as needed before serving.
- Serve hot, garnished with chopped parsley.
Notes
For extra richness, consider adding seared mushrooms or adjusting the amount of butter to your preference.
