Ingredients

  • 2 lbs beef chuck roast or stew meat, cut into bite-sized pieces
  • 2 lbs Yukon Gold or red potatoes, washed, peeled, and chopped
  • 6 cloves garlic, minced
  • 1/2 cup salted butter, melted
  • 2 cups beef or vegetable broth
  • 1 tsp fresh thyme, chopped (or 1/3 tsp dried)
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Prep the beef by cutting it into equal-sized pieces.
  2. Optionally, sear the beef bites in a skillet over medium-high heat for added flavor.
  3. Add the chopped potatoes into the slow cooker as the base.
  4. Create a garlic butter mixture by combining melted butter, minced garlic, herbs, and seasoning in a bowl.
  5. Pour the garlic butter mixture over the beef and potatoes in the slow cooker.
  6. Pour broth over the ingredients, covering them just enough.
  7. Slow cook on low for 6-8 hours or high for 4-5 hours.
  8. Adjust seasoning as needed before serving.
  9. Serve hot, garnished with chopped parsley.

Notes

For extra richness, consider adding seared mushrooms or adjusting the amount of butter to your preference.
