- 2 lbs beef (chuck roast or stew meat), cut into bite-sized pieces
- 4 medium potatoes (Yukon Gold or russet), cubed
- 4 cloves fresh garlic, minced
- 1/2 cup unsalted butter
- 1 cup beef broth
- 1 tsp fresh thyme or rosemary
- Salt and pepper to taste
Instructions
- Cut your beef into bite-sized pieces and season generously with salt and pepper.
- In a skillet, melt butter over medium heat and sauté minced garlic until fragrant—about 1-2 minutes.
- Add the sautéed garlic to your slow cooker, along with the seasoned beef and cubed potatoes.
- Pour in beef broth to cover the ingredients but leave some potatoes peeking out.
- Toss in fresh thyme or rosemary.
- Set your slow cooker on low for 6-8 hours or high for 4 hours.
- When it’s time to serve, taste and adjust seasoning if necessary.
- Spoon the beef and potatoes into bowls and garnish with freshly chopped parsley if desired.
Notes
For added richness, you can incorporate more butter at the end before serving. This dish freezes well, so consider making a double batch!
