Ingredients

- 2 lbs beef (chuck roast or sirloin), cut into bite-sized pieces
- 1.5 lbs baby potatoes or Yukon Gold potatoes
- 4 cloves fresh garlic, minced
- 1/2 cup unsalted butter
- 1 cup beef broth
- Fresh rosemary or thyme, to taste
- Salt and pepper, to taste
Instructions
- Prep the ingredients by cutting the beef into bite-sized pieces and washing the potatoes.
- Season the beef with salt, pepper, and minced garlic.
- Layer the beef at the bottom of the slow cooker, followed by the potatoes and fresh herbs.
- Pour the beef broth over the top.
- Slice the butter and distribute evenly on top of the ingredients.
- Cover and cook on low for 6-8 hours or high for 4-5 hours, until the beef is tender.
- About 30 minutes before serving, adjust seasoning and thickening sauce if desired.
- Serve in bowls, drizzled with the garlic butter sauce.
Notes
For added richness, consider browning the beef before adding it to the slow cooker. Serve with crusty bread to soak up the sauce.
