- 2 lbs Beef Chuck Roast
- 4 large Russet Potatoes, chopped
- 4 cloves Fresh Garlic, minced
- 1/2 cup Unsalted Butter
- 2 cups Beef Broth
- 1 tsp Fresh Thyme
- 1 tsp Fresh Rosemary
- Salt and Pepper, to taste
- Optional: 1 cup Mushrooms, sliced
Instructions
- Cut the beef into large chunks and season with salt and pepper.
- Minced the garlic and chop the potatoes into bite-sized pieces.
- In a skillet, sear the beef on medium-high heat until brown on all sides (optional).
- Layer the potatoes in the slow cooker, followed by the seared beef and minced garlic.
- Pour the beef broth over the mixture and add butter and herbs.
- Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
- Check for tenderness, and if the beef shreds easily, it’s done.
- Serve in bowls with sauce poured over the top.
Notes
For added depth, avoid opening the lid during cooking. Feel free to tweak the herbs and spices based on your taste.
