- 2 tablespoons fresh rosemary
- Juice and zest of 1 lemon

Instructions
- Season the chicken pieces generously with salt, pepper, and a sprinkle of dried thyme.
- In a skillet, heat olive oil over medium heat and sauté the onions and garlic until translucent.
- Transfer the sautéed mixture to the slow cooker. Add the chicken, rice, broth, lemon juice, lemon zest, and fresh herbs. Stir gently to combine.
- Cover and cook on low for 4-6 hours or high for 2-3 hours.
- About 30 minutes before serving, check for doneness—the chicken should be tender, and the rice fluffy.
- Stir in more fresh herbs and a splash of lemon juice before serving.
- Serve warm, topped with freshly cracked pepper or Parmesan if desired.

For a vegetarian option, substitute chicken with tofu, and for a nutty flavor, use quinoa or farro instead of rice.
