  • 1 Chuck Roast (34 lbs)
  • 4 cloves Garlic, minced
  • 2 Onions, chopped
  • 34 Potatoes, cubed
  • 3 Carrots, sliced
  • 4 cups Beef Broth
  • 23 sprigs fresh Rosemary
  • 23 sprigs fresh Thyme
  • Salt and Pepper, to taste
  • Optional: splash of red wine

Instructions

  1. Prep Your Ingredients: Wash and peel the vegetables. Chop the onions, slice the garlic, and cut the potatoes and carrots into even pieces.
  2. Sear the Meat: Heat a skillet over medium-high heat with a couple of tablespoons of oil. Sear the chuck roast on all sides until it forms a golden crust (about 4-5 minutes per side).
  3. Layer in the Slow Cooker: In the slow cooker, layer the onions first, followed by the prepared vegetables. Place the seared roast on top, then surround it with garlic, herbs, and a sprinkle of salt and pepper.
  4. Add Liquid: Pour in enough beef broth to cover the bottom layer of vegetables but not the meat.
  5. Set It and Forget It: Cover your slow cooker and set it to low for about 8 hours.
  6. Check for Done-ness: The roast is done when it’s fork-tender; it should shred easily when pulled.
  7. Serve and Enjoy: Let it sit for a few minutes before slicing or shredding. Serve with flavorful vegetables and some crusty bread.
