- 2 large eggs

- 8 ounces cream cheese (or sour cream)
- 1 lemon, squeezed
Instructions
- In a bowl, whisk together flour, baking powder, and a pinch of salt.
- In another bowl, beat the eggs, then mix in milk and fresh dill.
- Combine the two mixtures until just blended; a few lumps are perfectly fine.
- Heat a skillet over medium heat and grease lightly. Pour small scoops of the batter onto the pan, cooking until bubbles form on top, about 2-3 minutes.
- Flip the blinis and cook for an additional 1-2 minutes until golden brown. Remove and keep them warm.
- Spread cream cheese on each blini and layer with smoked salmon. Finish with a sprinkle of fresh dill and a squeeze of lemon juice.
- Serve immediately and enjoy!
