Instructions

  1. In a bowl, whisk together flour, baking powder, and a pinch of salt.
  2. In another bowl, beat the eggs, then mix in milk and fresh dill.
  3. Combine the two mixtures until just blended; a few lumps are perfectly fine.
  4. Heat a skillet over medium heat and grease lightly. Pour small scoops of the batter onto the pan, cooking until bubbles form on top, about 2-3 minutes.
  5. Flip the blinis and cook for an additional 1-2 minutes until golden brown. Remove and keep them warm.
  6. Spread cream cheese on each blini and layer with smoked salmon. Finish with a sprinkle of fresh dill and a squeeze of lemon juice.
  7. Serve immediately and enjoy!
