Description

A comforting chowder combining smoked salmon, tender potatoes, and leeks in a creamy broth, perfect for chilly evenings.

Ingredients

Scale
  • 2 tablespoons unsalted butter
  • 2 leeks, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 Yukon Gold or Russet potatoes, diced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 8 ounces smoked salmon, chunks
  • Fresh dill or chives, for garnish
  • Salt and pepper, to taste

Instructions

  1. In a large pot, melt the butter and add the leeks, onion, and garlic. Sauté over medium heat until softened and fragrant.
  2. Add the diced potatoes and pour in the broth, bringing everything to a gentle boil. Cook until the potatoes are tender, about 15-20 minutes.
  3. Lower the heat and stir in the heavy cream, mixing well.
  4. Gently fold in the smoked salmon and season with salt, pepper, and herbs.
  5. Simmer for another 10 minutes and serve hot, garnished with fresh herbs.

Notes

For lighter options, substitute heavy cream with half-and-half or coconut milk. Ensure to taste and adjust seasoning during cooking.
