  • 1 cup granulated sugar
  • 1 cup graham cracker crumbs
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 2 large eggs
  • 1 cup milk
  • ½ cup melted butter (or coconut oil)
  • 1 cup semi-sweet or milk chocolate chips
  • 1 cup mini marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners or grease the cups with butter.
  2. In a large bowl, combine flour, sugar, graham cracker crumbs, baking powder, and baking soda.
  3. In another bowl, whisk together eggs, milk, and melted butter until well blended.
  4. Slowly fold the wet ingredients into the dry ingredients until just combined.
  5. Gently fold in chocolate chips and mini marshmallows.
  6. Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full and sprinkling graham cracker crumbs on top.
  7. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  8. Let them cool for a few minutes before transferring them to a wire rack to cool completely.

Notes
