- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- 1 cup graham cracker crumbs
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 2 large eggs
- 1 cup milk
- ½ cup melted butter (or coconut oil)
- 1 cup semi-sweet or milk chocolate chips
- 1 cup mini marshmallows
Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners or grease the cups with butter.
- In a large bowl, combine flour, sugar, graham cracker crumbs, baking powder, and baking soda.
- In another bowl, whisk together eggs, milk, and melted butter until well blended.
- Slowly fold the wet ingredients into the dry ingredients until just combined.
- Gently fold in chocolate chips and mini marshmallows.
- Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full and sprinkling graham cracker crumbs on top.
- Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
- Let them cool for a few minutes before transferring them to a wire rack to cool completely.
Notes
Ensure not to overmix the batter for light and fluffy muffins. Consider adding a pinch of sea salt on top before baking for added flavor.
