- 4 skin-on, bone-in chicken thighs
- 1/4 cup all-purpose flour
- 1/4 cup butter
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- Pat the chicken thighs dry with paper towels and season both sides with salt and pepper.
- In a large skillet, melt butter over medium-high heat. Add chicken thighs skin-side down and cook until golden brown, about 5-7 minutes. Flip and brown the other side for an additional 5 minutes. Remove thighs and set aside.
- In the same pan, add more butter if needed and toss in the onions. Cook until translucent and golden, about 5 minutes. Stir in garlic and cook for another minute.
- Sprinkle flour over onions and garlic, stirring to make a roux. Cook for about 2 minutes.
- Gradually whisk in chicken broth until smooth, then simmer to thicken slightly.
- Return chicken thighs to the skillet, spooning gravy over them. Reduce heat, cover, and simmer for 30-40 minutes until fully cooked.
- Stir in fresh thyme and parsley before serving.
Notes
Serve over rice or mashed potatoes for a complete meal. Add garlic mushrooms on the side for a delightful touch.
