A family favorite dish with tender, juicy chicken thighs smothered in a rich, savory gravy made with garlic, onions, and mushrooms.

- 4 bone-in, skin-on chicken thighs
- 1 large onion, sliced
- 3 cloves garlic, minced
- 1 cup button or cremini mushrooms, sliced
- 1 cup chicken broth
- 1/2 cup heavy cream (optional)
- 1 tablespoon fresh thyme
- 1 tablespoon fresh rosemary
- Salt to taste
- Pepper to taste
- 1 teaspoon paprika
- 2 tablespoons oil for searing
Instructions
- Pat the chicken thighs dry and season with salt, pepper, and paprika.
- In a large cast-iron skillet, heat 1 tablespoon oil over medium-high heat. Sear chicken thighs skin-side down for 6-7 minutes, then flip and sear the other side for 5 minutes. Remove and set aside.
- In the same skillet, add onions and mushrooms. Sauté for 5 minutes until softened, then add garlic and sauté for another minute.
- Pour in chicken broth, scraping any browned bits from the pan. Bring to a simmer and add cream if desired.
- Return the chicken to the skillet, cover, and simmer on low for 25-30 minutes until cooked through.
- Before serving, sprinkle with fresh herbs for added flavor.
Notes
Serve with mashed potatoes or rice to soak up the gravy. Rest the chicken for a few minutes before serving to retain juices.
