Ingredients

  • 3 cups bread flour
  • 1 cup rolled oats
  • 1/2 cup active sourdough starter
  • 1/4 cup honey
  • 1 1/4 cups warm water
  • 1 1/2 teaspoons salt

Instructions

  1. Activate your sourdough starter by feeding it about 4-6 hours before starting.
  2. In a large mixing bowl, combine bread flour, rolled oats, and salt.
  3. In a separate bowl, mix warm water and honey until dissolved.
  4. Pour honey water into dry ingredients, add sourdough starter, and mix until shaggy dough forms.
  5. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  6. Place the dough in a greased bowl, cover, and let it rise for 4-6 hours until doubled.
  7. Shape the dough into a round or oval loaf and place in a proofing basket.
  8. Cover and let the loaf rise for another 1-2 hours until puffed up.
  9. Preheat the oven to 450°F (230°C) and place a Dutch oven inside to heat up.
  10. Flip the loaf into the hot Dutch oven, score the top, and cover with the lid.
  11. Bake for 30 minutes with the lid on, then uncover and bake for 15-20 more minutes until golden crust.
  12. Allow to cool on a wire rack before slicing.
