- 3 cups bread flour
- 1 cup rolled oats
- 1/2 cup active sourdough starter
- 1/4 cup honey
- 1 1/4 cups warm water
- 1 1/2 teaspoons salt
Instructions
- Activate your sourdough starter by feeding it about 4-6 hours before starting.
- In a large mixing bowl, combine bread flour, rolled oats, and salt.
- In a separate bowl, mix warm water and honey until dissolved.
- Pour honey water into dry ingredients, add sourdough starter, and mix until shaggy dough forms.
- Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover, and let it rise for 4-6 hours until doubled.
- Shape the dough into a round or oval loaf and place in a proofing basket.
- Cover and let the loaf rise for another 1-2 hours until puffed up.
- Preheat the oven to 450°F (230°C) and place a Dutch oven inside to heat up.
- Flip the loaf into the hot Dutch oven, score the top, and cover with the lid.
- Bake for 30 minutes with the lid on, then uncover and bake for 15-20 more minutes until golden crust.
- Allow to cool on a wire rack before slicing.
