Ingredients

- 2 cups gluten-free flour blend
- 1 packet active dry yeast
- 3/4 cup warm water (110°F or 43°C)
- 2 tablespoons honey or agave syrup
- 2 tablespoons melted butter or coconut oil
- 2 large eggs
- 1/2 teaspoon salt
Instructions
- In a mixing bowl, combine warm water and honey. Sprinkle yeast on top and let sit for about 5-10 minutes until frothy.
- In a separate bowl, whisk together the gluten-free flour blend and salt.
- Add melted butter and eggs to the yeast mixture, whisking until smooth. Gradually mix in dry ingredients to form a sticky dough.
- Cover with a clean kitchen towel and let rise in a warm place for about 45 minutes to an hour, until doubled in size.
- Grease a baking sheet and scoop golf ball-sized portions of dough onto it, spacing them apart.
- Preheat oven to 375°F (190°C) and let rolls rise for an additional 20-30 minutes until puffy.
- Bake for 18-20 minutes until golden brown and sound hollow when tapped on the bottom.
- Brush with melted butter after baking.
Notes
For a vegan option, substitute eggs with flaxseed meal mixed with water. For an allergen-friendly version, use sunflower oil instead of butter.
