Ingredients

  • 2 cups gluten-free flour blend
  • 1 packet active dry yeast
  • 3/4 cup warm water (110°F or 43°C)
  • 2 tablespoons honey or agave syrup
  • 2 tablespoons melted butter or coconut oil
  • 2 large eggs
  • 1/2 teaspoon salt

Instructions

  1. In a mixing bowl, combine warm water and honey. Sprinkle yeast on top and let sit for about 5-10 minutes until frothy.
  2. In a separate bowl, whisk together the gluten-free flour blend and salt.
  3. Add melted butter and eggs to the yeast mixture, whisking until smooth. Gradually mix in dry ingredients to form a sticky dough.
  4. Cover with a clean kitchen towel and let rise in a warm place for about 45 minutes to an hour, until doubled in size.
  5. Grease a baking sheet and scoop golf ball-sized portions of dough onto it, spacing them apart.
  6. Preheat oven to 375°F (190°C) and let rolls rise for an additional 20-30 minutes until puffy.
  7. Bake for 18-20 minutes until golden brown and sound hollow when tapped on the bottom.
  8. Brush with melted butter after baking.

For a vegan option, substitute eggs with flaxseed meal mixed with water. For an allergen-friendly version, use sunflower oil instead of butter.
