Ingredients

- 1 cup finely ground almonds (or almond flour)
- 1/2 cup all-purpose flour (or gluten-free flour)
- 2 large eggs (or substitutes like flaxseed or applesauce)
- 1/4 teaspoon nutmeg
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- In a bowl, mix ricotta and ground almonds until well combined.
- Gradually add all-purpose flour, mixing until a soft dough forms.
- Incorporate the eggs, nutmeg, salt, and pepper until smooth. Add more flour if dough is sticky.
- Divide dough into small balls and flatten into pillow shapes.
- Heat olive oil in a skillet over medium heat and sauté pillows until golden brown, about 3–4 minutes on each side.
- Remove from skillet and rest on paper towels to absorb excess oil.
Notes
For savory pillows, try adding sautéed mushrooms or spinach. For a sweeter version, incorporate lemon zest or honey.
