Ingredients

  • 1 cup finely ground almonds (or almond flour)
  • 1/2 cup all-purpose flour (or gluten-free flour)
  • 2 large eggs (or substitutes like flaxseed or applesauce)
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. In a bowl, mix ricotta and ground almonds until well combined.
  2. Gradually add all-purpose flour, mixing until a soft dough forms.
  3. Incorporate the eggs, nutmeg, salt, and pepper until smooth. Add more flour if dough is sticky.
  4. Divide dough into small balls and flatten into pillow shapes.
  5. Heat olive oil in a skillet over medium heat and sauté pillows until golden brown, about 3–4 minutes on each side.
  6. Remove from skillet and rest on paper towels to absorb excess oil.

Notes

For savory pillows, try adding sautéed mushrooms or spinach. For a sweeter version, incorporate lemon zest or honey.
