- 1 cup ricotta cheese
- ½ cup almond flour
- 2 large eggs
- ½ cup all-purpose flour (or gluten-free flour)
- ¼ tsp nutmeg
- ½ tsp salt
- Olive oil or butter for frying
Instructions
- In a mixing bowl, combine ricotta cheese, almond flour, eggs, flour, nutmeg, and salt. Mix until smooth.
- Dust your hands with flour and shape the mixture into pillows about 1½ inches thick.
- Heat olive oil or butter in a large skillet over medium heat until shimmering.
- Fry the pillows in the skillet, avoiding overcrowding, until golden and crispy, approximately 4-5 minutes per side.
- Transfer cooked pillows to a paper towel-lined plate to drain excess oil and season with salt.
- Serve warm with a side salad or dipping sauce.
Notes
Ensure the ricotta is well-drained to avoid soggy pillows. Don’t overcrowd the skillet for optimal frying.
