Description

Delicious soft pillows made with ricotta cheese and ground almonds, fried to golden perfection.


Ingredients

  • 1 cup ricotta cheese
  • ½ cup almond flour
  • 2 large eggs
  • ½ cup all-purpose flour (or gluten-free flour)
  • ¼ tsp nutmeg
  • ½ tsp salt
  • Olive oil or butter for frying

Instructions

  1. In a mixing bowl, combine ricotta cheese, almond flour, eggs, flour, nutmeg, and salt. Mix until smooth.
  2. Dust your hands with flour and shape the mixture into pillows about 1½ inches thick.
  3. Heat olive oil or butter in a large skillet over medium heat until shimmering.
  4. Fry the pillows in the skillet, avoiding overcrowding, until golden and crispy, approximately 4-5 minutes per side.
  5. Transfer cooked pillows to a paper towel-lined plate to drain excess oil and season with salt.
  6. Serve warm with a side salad or dipping sauce.

Notes

Ensure the ricotta is well-drained to avoid soggy pillows. Don’t overcrowd the skillet for optimal frying.
