- 8 oz egg noodles
- 1 cup sour cream
- 8 oz fresh mushrooms (button or cremini), sliced
- 1 onion, chopped
- 1 cup cheddar cheese, shredded
- 2 cloves garlic, minced
- 1 cup beef broth
- Salt and pepper to taste
- Fresh parsley or thyme for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the egg noodles in a large pot of salted boiling water according to package instructions. Drain and set aside.
- In a large skillet, heat a tablespoon of oil over medium heat. Add the chopped onions and minced garlic, sautéing until softened and golden.
- Add the ground beef to the skillet and cook until browned, about 5 to 7 minutes. Drain excess fat if necessary.
- Stir in the mushrooms, cooking until softened, about 3-4 minutes.
- Pour in the beef broth and mix in the cooked noodles. Toss to combine and fold in the sour cream.
- Transfer the mixture into a greased casserole dish and top with shredded cheddar cheese.
- Bake for 25-30 minutes, or until the cheese is bubbly and golden brown.
- Let it cool for a few minutes before serving. Garnish with fresh herbs.
Notes
For lighter options, substitute ground turkey/chicken for beef and Greek yogurt for sour cream. Cooking noodles al dente is crucial as they will continue to bake.
