  • 2 large eggs
  • ½ cup melted butter or vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, combine sourdough discard, granulated sugar, brown sugar, eggs, melted butter, and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, stirring gently until combined. Fold in any optional add-ins.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes until a toothpick inserted comes out clean.
  7. Let the bread cool for 10 minutes, then transfer to a wire rack to cool.
