- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- ¼ cup brown sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 teaspoon ground cinnamon
- A pinch of salt
- 2 large eggs
- ½ cup melted butter or vegetable oil
- 1 teaspoon vanilla extract
- Optional add-ins: nuts, raisins, or chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
- In another bowl, combine sourdough discard, granulated sugar, brown sugar, eggs, melted butter, and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, stirring gently until combined. Fold in any optional add-ins.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes until a toothpick inserted comes out clean.
- Let the bread cool for 10 minutes, then transfer to a wire rack to cool.
Notes
For extra flavor, try browning your butter before mixing. Use room temperature ingredients for better incorporation.
