  • 2 cans chickpeas, drained and rinsed
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups chicken or vegetable broth
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 bay leaf
  • 2 tbsp olive oil
  • Fresh parsley or cilantro, for garnish

Instructions

  1. Prepare your ingredients: dice the onion, chop the bell peppers, and mince the garlic.
  2. In a large skillet or pot, heat olive oil over medium heat. Add the onion and sauté until translucent, about 3-5 minutes. Stir in the garlic and cook for another minute.
  3. Add the sliced chorizo and sauté until it releases its oils and browns slightly, about 5-7 minutes.
  4. Incorporate the bell peppers, carrots, and celery; sauté for about 5 minutes to meld the flavors.
  5. Add the chickpeas, broth, paprika, cumin, and bay leaf. Bring to a gentle boil, then reduce the heat to low, cover, and simmer for 20-30 minutes.
  6. Before serving, adjust seasoning with salt and pepper, remove the bay leaf, and stir in fresh herbs.
  7. Ladle the stew into bowls and serve with crusty bread or over rice.

Notes

Feel free to customize the vegetables based on what’s in season. A splash of tomato paste can add extra richness.
