- 1 lb Spanish chorizo, sliced
- 2 cans chickpeas, drained and rinsed
- 1 onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups chicken or vegetable broth
- 1 tsp paprika
- 1 tsp cumin
- 1 bay leaf
- 2 tbsp olive oil
- Fresh parsley or cilantro, for garnish
Instructions
- Prepare your ingredients: dice the onion, chop the bell peppers, and mince the garlic.
- In a large skillet or pot, heat olive oil over medium heat. Add the onion and sauté until translucent, about 3-5 minutes. Stir in the garlic and cook for another minute.
- Add the sliced chorizo and sauté until it releases its oils and browns slightly, about 5-7 minutes.
- Incorporate the bell peppers, carrots, and celery; sauté for about 5 minutes to meld the flavors.
- Add the chickpeas, broth, paprika, cumin, and bay leaf. Bring to a gentle boil, then reduce the heat to low, cover, and simmer for 20-30 minutes.
- Before serving, adjust seasoning with salt and pepper, remove the bay leaf, and stir in fresh herbs.
- Ladle the stew into bowls and serve with crusty bread or over rice.
Notes
Feel free to customize the vegetables based on what’s in season. A splash of tomato paste can add extra richness.
