- 1 cup pumpkin puree
- 1/2 cup melted butter or coconut oil
- 1 cup brown sugar
- 1/4 cup maple syrup
- 2 large eggs
- 2 cups gluten-free flour blend
- 1 teaspoon baking powder
- 2 teaspoons ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves (optional)
- Salt to taste
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with coconut oil or line with parchment paper.
- In a mixing bowl, combine pumpkin puree, melted butter (or coconut oil), brown sugar, and maple syrup. Mix until smooth.
- Add eggs one at a time, beating well after each addition.
- In a separate bowl, whisk together gluten-free flour blend, baking powder, and spices.
- Gradually add the dry mixture to the wet ingredients, stirring until just combined.
- Pour batter into the prepared baking dish and smooth with a spatula. Optionally, sprinkle nuts or chocolate chips on top.
- Bake for 25–30 minutes, or until a toothpick comes out clean.
- Cool in the pan for 15 minutes before transferring to a wire rack.
- Cut into squares and dust with powdered sugar if desired.
Notes
For a dairy-free version, use coconut oil instead of butter. These bars can be served warm or at room temperature.
