Instructions
- Heat the olive oil in a large pot over medium heat. Add onions, bell peppers, and garlic; sauté for 5 minutes until fragrant.
- Add the sliced sausage and cook until browned, about 5-7 minutes.
- Stir in diced potatoes, celery, and carrots; combine well.
- Pour in the broth and bring to a gentle boil, letting it simmer.
- Add Cajun seasoning and salt, adjusting to your taste. Optionally, add red pepper flakes for extra heat.
- Simmer for 20-25 minutes, or until the potatoes are fork-tender. Stir in heavy cream towards the end for creaminess.
- Serve hot, garnished with fresh parsley and enjoy with crusty bread.
