- 1 medium globe eggplant, diced
- 4 cloves garlic, minced
- 1–2 teaspoons crushed red pepper, adjust to taste
- 2 tablespoons olive oil

- Salt and pepper, to taste
Instructions
- Prepare Your Ingredients: Chop the eggplant into bite-sized cubes and mince the garlic.
- Sauté the Aromatics: In a large skillet, heat olive oil over medium heat. Add minced garlic and crushed red pepper, stirring for 1-2 minutes until fragrant.
- Cook the Eggplant: Add chopped eggplant, season with salt and pepper, and stir frequently for about 7-10 minutes until tender and caramelized.
- Boil the Pasta: In a separate pot, bring salted water to boil and cook pasta according to package instructions. Reserve a cup of pasta water before draining.
- Combine Everything: Add drained pasta to the skillet with eggplant, adding reserved pasta water as needed for a light sauce. Toss in fresh herbs and adjust seasoning to taste.
- Serve Hot: Garnish with additional herbs and Parmesan if desired, and enjoy warm.
Notes
For substitutions, use zucchini or mushrooms instead of eggplant. Gluten-free pasta can also be used.
