Ingredients
- Boneless chicken (breast or thighs)
- Flavorful chicken or vegetable broth
- Shiittake or cremini mushrooms
- Fresh garlic, minced
- Fresh ginger, minced
- Scallions, chopped
- Bright colorful vegetables (bell peppers, bok choy, snap peas)
- Ramen noodles (or udon/rice noodles)
- Fresh or paste chili, to taste
- Fresh cilantro or basil, for garnish
- Sesame oil
Instructions
- In a large pot, heat a drizzle of sesame oil over medium heat. Add minced garlic and ginger, sautéing until fragrant.
- Add the chicken pieces and stir until lightly browned. Pour in the broth and bring to a gentle simmer.
- Add mushrooms and chosen vegetables, allowing them to soften and infuse flavor into the broth.
- While the broth simmers, cook ramen noodles according to package instructions, then drain and set aside.
- Once chicken is cooked through and veggies are tender, add cooked noodles to the broth. Season with soy sauce and chili paste to taste.
- Garnish with fresh herbs and additional chili flakes before serving.
Notes
For a vegetarian version, substitute chicken with tofu. Taste the broth as you season to adjust flavors to your preference.
