Ingredients

  • Boneless chicken (breast or thighs)
  • Flavorful chicken or vegetable broth
  • Shiittake or cremini mushrooms
  • Fresh garlic, minced
  • Fresh ginger, minced
  • Scallions, chopped
  • Bright colorful vegetables (bell peppers, bok choy, snap peas)
  • Ramen noodles (or udon/rice noodles)
  • Fresh or paste chili, to taste
  • Fresh cilantro or basil, for garnish
  • Sesame oil

Instructions

  1. In a large pot, heat a drizzle of sesame oil over medium heat. Add minced garlic and ginger, sautéing until fragrant.
  2. Add the chicken pieces and stir until lightly browned. Pour in the broth and bring to a gentle simmer.
  3. Add mushrooms and chosen vegetables, allowing them to soften and infuse flavor into the broth.
  4. While the broth simmers, cook ramen noodles according to package instructions, then drain and set aside.
  5. Once chicken is cooked through and veggies are tender, add cooked noodles to the broth. Season with soy sauce and chili paste to taste.
  6. Garnish with fresh herbs and additional chili flakes before serving.

Notes

For a vegetarian version, substitute chicken with tofu. Taste the broth as you season to adjust flavors to your preference.
