A delightful and nutritious Spinach and Feta Omelet that offers a perfect balance of earthy spinach and creamy feta cheese, making it a family favorite for breakfast, brunch, or a light dinner.

- 2–3 large eggs
- 1 cup fresh spinach (baby spinach preferred)
- 1/4 cup feta cheese, crumbled
- 1 tablespoon butter or olive oil
- Salt and pepper to taste
Instructions
- Prepare ingredients: Wash spinach and drain. Crumble feta cheese into a bowl.
- Heat 1 tablespoon of butter or olive oil in a skillet over medium heat. Add spinach and sauté until wilted, about 2-3 minutes. Season with salt and pepper. Remove spinach and set aside.
- In a bowl, crack the eggs and whisk until well combined. Add a splash of milk if desired.
- In the same skillet, add 1 teaspoon of butter, melt, and coat the pan. Pour in the egg mixture and cook undisturbed for 1-2 minutes until edges set.
- Gently stir eggs with a spatula, pushing towards the center; let uncooked eggs flow to edges.
- Once mostly cooked, add sautéed spinach and crumbled feta to one half of the omelet.
- Carefully fold the omelet over the filled side. Cook for another minute or until cheese is melted and eggs are cooked through.
- Slide onto a plate, garnish with herbs or extra feta, and serve hot.
Notes
You can substitute spinach with kale or Swiss chard, and for cheese, try goat cheese or mozzarella.
