A delightful and nutritious Spinach and Feta Omelet that offers a perfect balance of earthy spinach and creamy feta cheese, making it a family favorite for breakfast, brunch, or a light dinner.


Ingredients

  • 23 large eggs
  • 1 cup fresh spinach (baby spinach preferred)
  • 1/4 cup feta cheese, crumbled
  • 1 tablespoon butter or olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare ingredients: Wash spinach and drain. Crumble feta cheese into a bowl.
  2. Heat 1 tablespoon of butter or olive oil in a skillet over medium heat. Add spinach and sauté until wilted, about 2-3 minutes. Season with salt and pepper. Remove spinach and set aside.
  3. In a bowl, crack the eggs and whisk until well combined. Add a splash of milk if desired.
  4. In the same skillet, add 1 teaspoon of butter, melt, and coat the pan. Pour in the egg mixture and cook undisturbed for 1-2 minutes until edges set.
  5. Gently stir eggs with a spatula, pushing towards the center; let uncooked eggs flow to edges.
  6. Once mostly cooked, add sautéed spinach and crumbled feta to one half of the omelet.
  7. Carefully fold the omelet over the filled side. Cook for another minute or until cheese is melted and eggs are cooked through.
  8. Slide onto a plate, garnish with herbs or extra feta, and serve hot.

Notes

You can substitute spinach with kale or Swiss chard, and for cheese, try goat cheese or mozzarella.
