- 4 cups fresh spinach
- 1 can (14 oz) artichokes, drained and chopped
- 1 medium onion, finely chopped
- 4 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 cup cream or milk
- 1/2 cup grated Parmesan cheese or nutritional yeast
- Salt and pepper, to taste
- 1 splash of lemon juice
Instructions
- In a large pot, heat some olive oil over medium heat. Add finely chopped onion and minced garlic, and sauté until fragrant and the onions become translucent.
- Stir in fresh spinach and cook for a few minutes until wilted.
- Add chopped artichokes and your choice of broth. Bring this mixture to a gentle simmer.
- Using an immersion blender, carefully purée the soup until smooth.
- Stir in cream or milk to reach your desired consistency.
- Taste and season with salt, pepper, and a splash of lemon juice.
- Lastly, stir in grated Parmesan for added richness.
Notes
For a healthier option, use unsweetened almond milk or coconut cream instead of cream. Reserve some artichokes for added texture.
