Ingredients

  • 4 cups fresh spinach
  • 1 can (14 oz) artichokes, drained and chopped
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup cream or milk
  • 1/2 cup grated Parmesan cheese or nutritional yeast
  • Salt and pepper, to taste
  • 1 splash of lemon juice

Instructions

  1. In a large pot, heat some olive oil over medium heat. Add finely chopped onion and minced garlic, and sauté until fragrant and the onions become translucent.
  2. Stir in fresh spinach and cook for a few minutes until wilted.
  3. Add chopped artichokes and your choice of broth. Bring this mixture to a gentle simmer.
  4. Using an immersion blender, carefully purée the soup until smooth.
  5. Stir in cream or milk to reach your desired consistency.
  6. Taste and season with salt, pepper, and a splash of lemon juice.
  7. Lastly, stir in grated Parmesan for added richness.

Notes

For a healthier option, use unsweetened almond milk or coconut cream instead of cream. Reserve some artichokes for added texture.
