- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach
- 1 cup dried cranberries
- 8 oz cream cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh thyme or rosemary (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Create a pocket in each chicken breast by slicing them horizontally, making sure not to cut all the way through.
- In a skillet, heat olive oil over medium heat, add minced garlic, and sauté until fragrant.
- Add spinach to the skillet and wilt for about 2-3 minutes. Remove from heat and let cool slightly.
- In a mixing bowl, combine sautéed spinach, garlic, cream cheese, and cranberries. Season with salt, pepper, and thyme or rosemary.
- Stuff each chicken breast pocket with the spinach and cranberry mixture. Secure with toothpicks if needed.
- Place the stuffed breasts in a baking dish and add a bit of broth or white wine around them.
- Bake for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
- Allow the chicken to rest for a few minutes before serving.
Notes
For a lighter dish, substitute ricotta for cream cheese or use turkey instead of chicken.
