A harmonious blend of flavors in succulent chicken stuffed with earthy spinach, sweet-tart cranberries, and creamy cheese.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach
  • 1 cup dried cranberries
  • 8 oz cream cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh thyme or rosemary (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Create a pocket in each chicken breast by slicing them horizontally, making sure not to cut all the way through.
  3. In a skillet, heat olive oil over medium heat, add minced garlic, and sauté until fragrant.
  4. Add spinach to the skillet and wilt for about 2-3 minutes. Remove from heat and let cool slightly.
  5. In a mixing bowl, combine sautéed spinach, garlic, cream cheese, and cranberries. Season with salt, pepper, and thyme or rosemary.
  6. Stuff each chicken breast pocket with the spinach and cranberry mixture. Secure with toothpicks if needed.
  7. Place the stuffed breasts in a baking dish and add a bit of broth or white wine around them.
  8. Bake for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
  9. Allow the chicken to rest for a few minutes before serving.

Notes

For a lighter dish, substitute ricotta for cream cheese or use turkey instead of chicken.
