Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach
  • 1 cup dried cranberries
  • 8 ounces cream cheese, softened
  • 1 teaspoon thyme
  • 2 cloves garlic, minced

  • Olive oil, for sautéing and searing

Instructions

  1. Preheat the oven to 375°F (190°C).

  3. In a large bowl, combine sautéed spinach, dried cranberries, cream cheese, and thyme.
  4. Create pockets in each chicken breast and season with salt and pepper.
  5. Stuff each pocket generously with the spinach and cranberry mixture, securing with toothpicks or kitchen twine.
  6. Sear the stuffed chicken in a skillet for about 3 minutes on each side until golden brown.
  7. Transfer the chicken to a baking dish and bake for 25-30 minutes until cooked through.
  8. Let the chicken rest for 5-10 minutes before serving.

Notes

For added flavor, consider using fresh herbs. Pair with a light salad or quinoa for a complete meal.
