- 1 package of puff pastry (store-bought or homemade)
- 10 ounces fresh spinach (or frozen, thawed and drained)
- 4 ounces cream cheese
- 4 ounces feta cheese (or ricotta)
- 1 small onion, chopped
- 2 cloves garlic, minced
- Fresh herbs (dill or parsley), to taste
- 1 beaten egg (for egg wash)
- Salt and pepper, to taste
- Olive oil, for sautéing
Instructions
- Preheat the oven to 400°F (200°C).
- Sauté onions and garlic in olive oil until translucent, then add spinach and cook until wilted.
- Transfer the spinach mixture to a bowl. Add cream cheese, feta, herbs, salt, and pepper, mixing until well combined.
- Roll out puff pastry to 1/8 inch thick and cut into squares or circles.
- Place about a tablespoon of filling in the center of each pastry piece, fold over, and seal the edges.
- Brush tops with beaten egg for a golden finish.
- Bake on a parchment-lined sheet for 20-25 minutes until golden brown and puffy.
- Allow to cool briefly before serving warm or at room temperature.
Notes
For best results, ensure the pastry is cold before baking to achieve flaky layers. Allow filling to cool before adding to pastries to prevent sogginess.
