Ingredients

- 1 lb boneless chicken (breast or thighs)
- 8 oz egg noodles (or rice noodles)
- 4 cloves fresh garlic, minced
- 1/4 cup low-sodium soy sauce
- 2 tbsp honey
- 1 cup sliced bell peppers
- 1 cup sliced mushrooms
- 2 green onions, sliced
- 2 tbsp butter
- Oil for tossing noodles
Instructions
- Marinate the chicken in soy sauce and minced garlic for 15 minutes.
- Cook noodles according to package instructions, then drain and toss in oil.
- In a skillet, heat butter over medium heat, add marinated chicken, and cook for 5-7 minutes until done.
- Add sliced vegetables and sauté until softened, then mix in soy sauce, honey, and garlic.
- Stir in cooked noodles and toss to coat, cooking for an additional 2-3 minutes.
- Garnish with sliced green onions and serve immediately.
Notes
Feel free to customize the vegetables based on what you have on hand; zucchini and snap peas also work well.
