- 2 cups rolled oats
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 2 cups milk (dairy or plant-based)
- 2 large eggs
- 1/4 cup maple syrup or honey
- 8 oz cream cheese, softened
- 2 cups fresh strawberries, sliced
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together the rolled oats, baking powder, vanilla extract, and cinnamon.
- In a separate bowl, whisk together the milk, eggs, and maple syrup until combined.
- Pour the wet mixture into the oat mixture and stir until fully incorporated.
- In a greased baking dish, layer half of the oat mixture, followed by dollops of cream cheese and sliced strawberries.
- Top with the remaining oat mixture and more strawberries.
- Bake for 30–35 minutes, or until the oats are set and the edges are golden brown.
- Cool slightly before serving, possibly with a drizzle of maple syrup on top.
Notes
For a dairy-free option, use vegan cream cheese and plant-based milk. Frozen strawberries can be used if fresh ones are not available.
