- 1 cup powdered sugar
- 1 cup fresh strawberries, chopped
Instructions
- Preheat your oven to 350°F (175°C) and prep a 10×15 jelly roll pan with parchment paper.
- In a mixing bowl, whisk eggs and granulated sugar until pale and fluffy (5-7 minutes).
- Carefully fold in flour, baking powder, and salt into the egg mixture.
- Melt butter, mix with vanilla, and gently fold into the batter.
- Pour batter into the prepared pan and bake for 12-15 minutes.
- While the cake bakes, whisk cream cheese, heavy cream, and powdered sugar until fluffy; stir in strawberries.
- Remove cake from oven, cover with a kitchen towel, and let it cool slightly.
- Invert the cake, peel off parchment, roll it in the towel, and cool completely.
- Unroll, spread filling evenly, roll it back up without the towel, wrap in plastic wrap, and refrigerate for at least 2 hours.
- Slice and serve!
