Strawberry Cream Cheese Breakfast Pastries

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 8 oz cream cheese, softened
  • 1 cup fresh strawberries, diced
  • 1/4 cup granulated sugar
  • 1 egg (for egg wash)
  • 1 tsp vanilla extract (optional)
  • 1 tsp lemon zest (optional)

Instructions

  1. In a large bowl, combine flour and salt. Cut in the cold, cubed butter until you get a mixture that resembles coarse crumbs. Gradually add cold water, a tablespoon at a time, mixing until the dough comes together. Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. In another bowl, mix softened cream cheese with granulated sugar, vanilla extract, and a pinch of salt until smooth. Fold in diced strawberries gently.
  3. Preheat your oven to 375°F (190°C). Roll out your dough on a floured surface to about 1/8-inch thick. Cut into squares or triangles.
  4. Place a spoonful of the cream cheese and strawberry mixture in the center of each dough piece. Fold over and press the edges to seal.
  5. Brush with an egg wash and bake for 20-25 minutes or until golden brown.
  6. Allow to cool slightly before serving. Dust with powdered sugar if desired.

Notes

Chill your ingredients for a flakier pastry. Don’t overwork the dough to maintain its texture.
