- 2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 8 oz cream cheese, softened
- 1 cup fresh strawberries, diced
- 1/4 cup granulated sugar
- 1 egg (for egg wash)
- 1 tsp vanilla extract (optional)
- 1 tsp lemon zest (optional)
Instructions
- In a large bowl, combine flour and salt. Cut in the cold, cubed butter until you get a mixture that resembles coarse crumbs. Gradually add cold water, a tablespoon at a time, mixing until the dough comes together. Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- In another bowl, mix softened cream cheese with granulated sugar, vanilla extract, and a pinch of salt until smooth. Fold in diced strawberries gently.
- Preheat your oven to 375°F (190°C). Roll out your dough on a floured surface to about 1/8-inch thick. Cut into squares or triangles.
- Place a spoonful of the cream cheese and strawberry mixture in the center of each dough piece. Fold over and press the edges to seal.
- Brush with an egg wash and bake for 20-25 minutes or until golden brown.
- Allow to cool slightly before serving. Dust with powdered sugar if desired.
Notes
Chill your ingredients for a flakier pastry. Don’t overwork the dough to maintain its texture.
