Ingredients

  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup fresh strawberries, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare your muffin tin by greasing it or using paper liners.
  3. In a large mixing bowl, combine flour, sugar, baking powder, and salt.
  4. In another bowl, blend softened cream cheese with melted butter until smooth. Add in the eggs and mix until fluffy.
  5. Gently fold the dry ingredients into the wet mixture until just combined.
  6. Carefully incorporate the chopped strawberries into the batter.
  7. Spoon the batter into the muffin tin, filling each cup about ¾ full.
  8. Bake for 20-25 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  9. Allow the muffins to cool for a few minutes in the tin before transferring to a wire rack.
  10. Enjoy warm or at room temperature.

Notes

Use room temperature ingredients for better mixing. Do not overmix the batter to keep muffins tender.
