- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 cup granulated sugar
- 1/2 teaspoon salt
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 cup fresh strawberries, chopped
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare your muffin tin by greasing it or using paper liners.
- In a large mixing bowl, combine flour, sugar, baking powder, and salt.
- In another bowl, blend softened cream cheese with melted butter until smooth. Add in the eggs and mix until fluffy.
- Gently fold the dry ingredients into the wet mixture until just combined.
- Carefully incorporate the chopped strawberries into the batter.
- Spoon the batter into the muffin tin, filling each cup about ¾ full.
- Bake for 20-25 minutes or until golden brown and a toothpick inserted in the center comes out clean.
- Allow the muffins to cool for a few minutes in the tin before transferring to a wire rack.
- Enjoy warm or at room temperature.
Notes
Use room temperature ingredients for better mixing. Do not overmix the batter to keep muffins tender.
