Ingredients

  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup fresh strawberries, chopped
  • 8 ounces cream cheese, softened
  • 2 tablespoons sugar (for cream cheese filling)
  • 1 teaspoon vanilla extract (for cream cheese filling)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. Wash and chop 1 cup of fresh strawberries into small pieces.
  3. In a bowl, beat together 8 ounces of softened cream cheese with 2 tablespoons of sugar and 1 teaspoon of vanilla extract until smooth.
  4. In a large mixing bowl, whisk together 2 cups of all-purpose flour, 1 tablespoon of baking powder, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt.
  5. Cream together 1/2 cup of softened unsalted butter and 1 cup of granulated sugar until light and fluffy. Add in 2 large eggs, one at a time, mixing well after each addition. Stir in 1 teaspoon of vanilla extract and 1 cup of buttermilk.
  6. Gradually add the wet mixture into the bowl of dry ingredients, stirring gently until just combined. Gently fold in the chopped strawberries.
  7. Spoon the batter into each muffin cup, filling them about 2/3 full. Scoop a dollop of the cream cheese mixture on top and swirl it into the batter.
  8. Bake for 20-25 minutes or until the tops are golden and a toothpick inserted comes out clean.
  9. Allow the muffins to cool in the tin for about five minutes before transferring them to a wire rack to cool completely.

Notes

For extra sweetness, sprinkle coarse sugar on top before baking. Ensure all ingredients are at room temperature for best results.
