- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs

- 1 cup buttermilk
- 1 cup fresh strawberries, chopped
- 8 ounces cream cheese, softened
- 2 tablespoons sugar (for cream cheese filling)

Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- Wash and chop 1 cup of fresh strawberries into small pieces.
- In a bowl, beat together 8 ounces of softened cream cheese with 2 tablespoons of sugar and 1 teaspoon of vanilla extract until smooth.
- In a large mixing bowl, whisk together 2 cups of all-purpose flour, 1 tablespoon of baking powder, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt.
- Cream together 1/2 cup of softened unsalted butter and 1 cup of granulated sugar until light and fluffy. Add in 2 large eggs, one at a time, mixing well after each addition. Stir in 1 teaspoon of vanilla extract and 1 cup of buttermilk.
- Gradually add the wet mixture into the bowl of dry ingredients, stirring gently until just combined. Gently fold in the chopped strawberries.
- Spoon the batter into each muffin cup, filling them about 2/3 full. Scoop a dollop of the cream cheese mixture on top and swirl it into the batter.
- Bake for 20-25 minutes or until the tops are golden and a toothpick inserted comes out clean.
- Allow the muffins to cool in the tin for about five minutes before transferring them to a wire rack to cool completely.
Notes
For extra sweetness, sprinkle coarse sugar on top before baking. Ensure all ingredients are at room temperature for best results.
