Deliciously sweet and tart Strawberry Crumble Buttery Bars with a buttery shortbread crust, juicy strawberry filling, and a crunchy topping.

- 3 cups fresh strawberries, hulled
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- ½ cup granulated sugar for filling
- 2 tablespoons lemon juice
- 2 tablespoons cornstarch
- 2 cups all-purpose flour
- 1 cup rolled oats
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×9-inch square baking dish or line with parchment paper.
- In a large mixing bowl, beat together butter, sugar, and vanilla until fluffy.
- Add flour and salt, stirring until just combined.
- Press two-thirds of the mixture into the bottom of the baking dish and bake for 15-20 minutes or until lightly golden.
- In a medium bowl, combine strawberries, ½ cup sugar, lemon juice, and cornstarch; toss to coat.
- Spread the strawberry mixture over the baked crust.
- Crumble the remaining dough on top of the strawberries.
- Bake for an additional 25-30 minutes until the top is golden and the filling is bubbly.
- Let cool completely before slicing.
Notes
For added flavor, consider drizzling with melted chocolate or serving with whipped cream.
