Description

Deliciously sweet and tart Strawberry Crumble Buttery Bars with a buttery shortbread crust, juicy strawberry filling, and a crunchy topping.


Ingredients

  • 3 cups fresh strawberries, hulled
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • ½ cup granulated sugar for filling
  • 2 tablespoons lemon juice
  • 2 tablespoons cornstarch
  • 2 cups all-purpose flour
  • 1 cup rolled oats
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×9-inch square baking dish or line with parchment paper.
  3. In a large mixing bowl, beat together butter, sugar, and vanilla until fluffy.
  4. Add flour and salt, stirring until just combined.
  5. Press two-thirds of the mixture into the bottom of the baking dish and bake for 15-20 minutes or until lightly golden.
  6. In a medium bowl, combine strawberries, ½ cup sugar, lemon juice, and cornstarch; toss to coat.
  7. Spread the strawberry mixture over the baked crust.
  8. Crumble the remaining dough on top of the strawberries.
  9. Bake for an additional 25-30 minutes until the top is golden and the filling is bubbly.
  10. Let cool completely before slicing.
