Instructions
- Prepare the filling by mixing mashed strawberries, sugar, cornstarch, and cinnamon in a bowl. Let sit for 15 minutes.
- Make the dough by combining flour and salt, cutting in butter until crumbly. Gradually add cold water and knead lightly, then chill for 30 minutes.
- Roll out the chilled dough to about 1/8 inch thick and cut out circles.
- Fill each circle with a spoonful of the strawberry mixture, fold, and seal edges with a fork.
- Brush with egg wash for a golden finish.
- Preheat oven to 375°F (190°C) and bake empanadas for 20-25 minutes until golden brown.
- Cool slightly before serving warm or at room temperature.
