A delightful cheesecake blending the sweetness of strawberries with the earthy flavor of matcha for a refreshing and indulgent dessert experience.


Ingredients

  • 8 oz cream cheese, softened
  • 1 cup fresh strawberries, chopped
  • 2 tbsp matcha powder
  • 3/4 cup sugar
  • 1 cup heavy whipping cream
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 2 tbsp lemon juice

Instructions

  1. Prepare your crust by mixing graham cracker crumbs with melted butter and pressing into the bottom of a springform pan. Pre-bake at 350°F for 10 minutes.
  2. In a mixing bowl, beat softened cream cheese, sugar, and lemon juice until smooth.
  3. Whisk matcha powder with a bit of warm water until smooth, then blend into the cream cheese mixture.
  4. Gently fold in chopped strawberries, reserving some for decoration.
  5. Fold whipped cream into the mixture, then pour over the crust and smooth the top.
  6. Refrigerate for at least four hours or overnight to allow to set.
  7. Top with remaining strawberries and a dusting of matcha powder before serving.

Notes

Allowing the cheesecake to chill longer enhances the flavors. Use room temperature ingredients to avoid lumps.
