- 8 oz cream cheese, softened
- 1 cup fresh strawberries, chopped
- 2 tbsp matcha powder
- 3/4 cup sugar
- 1 cup heavy whipping cream
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 2 tbsp lemon juice
Instructions
- Prepare your crust by mixing graham cracker crumbs with melted butter and pressing into the bottom of a springform pan. Pre-bake at 350°F for 10 minutes.
- In a mixing bowl, beat softened cream cheese, sugar, and lemon juice until smooth.
- Whisk matcha powder with a bit of warm water until smooth, then blend into the cream cheese mixture.
- Gently fold in chopped strawberries, reserving some for decoration.
- Fold whipped cream into the mixture, then pour over the crust and smooth the top.
- Refrigerate for at least four hours or overnight to allow to set.
- Top with remaining strawberries and a dusting of matcha powder before serving.
Notes
Allowing the cheesecake to chill longer enhances the flavors. Use room temperature ingredients to avoid lumps.
