- 1 cup unsalted butter, softened
- 2 tablespoons matcha powder
- 1 cup fresh strawberries, chopped
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 egg yolk
- Powdered sugar for dusting
Instructions
- Preheat oven to 350°F (175°C).
- Cream together the softened butter and granulated sugar until light and fluffy (about 3-5 minutes).
- Add the egg yolk and vanilla extract, mixing to combine.
- Sift in the flour and matcha powder, mixing until just combined.
- Gently fold in the chopped strawberries.
- Turn the dough out onto a floured surface and roll to ½ inch thick.
- Cut out desired shapes with cookie cutters and place on a parchment-lined baking sheet.
- Bake for 12-15 minutes, until edges are lightly golden.
- Cool on a wire rack and dust with powdered sugar before serving.
Notes
Chilling the dough for about 30 minutes can help with handling and shape retention during baking.
