  • 1 cup fresh strawberries, chopped
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 egg yolk
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cream together the softened butter and granulated sugar until light and fluffy (about 3-5 minutes).
  3. Add the egg yolk and vanilla extract, mixing to combine.
  4. Sift in the flour and matcha powder, mixing until just combined.
  5. Gently fold in the chopped strawberries.
  6. Turn the dough out onto a floured surface and roll to ½ inch thick.
  7. Cut out desired shapes with cookie cutters and place on a parchment-lined baking sheet.
  8. Bake for 12-15 minutes, until edges are lightly golden.
  9. Cool on a wire rack and dust with powdered sugar before serving.
