Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together softened butter, granulated sugar, and brown sugar until light and fluffy (about 3-5 minutes).
- Beat in eggs one at a time, followed by vanilla extract.
- In a separate bowl, combine flour, baking powder, and salt; gradually mix into the butter mixture until just combined.
- Fold in the crushed freeze-dried strawberries.
- Scoop dough onto the prepared baking sheet, leaving space for spreading.
- Bake for 8-10 minutes, until edges are lightly golden.
- Cool completely on a wire rack before frosting.
- Mix powdered sugar, milk, and strawberry extract for icing, drizzle over cookies, and top with sprinkles.
Notes
Chill the dough for easier handling if it seems too sticky. Optionally, add strawberry jam between two cookies for extra sweetness.
