Ingredients

  • 2 cups fresh strawberries, hulled and chopped
  • 8 oz cream cheese, softened
  • 1 cup whipped cream
  • 1 cup shortcake crumbs or crushed buttery cookies
  • 1/2 cup confectioners’ sugar
  • 8 oz white chocolate, melted
  • Optional: 1 tsp vanilla extract or lemon zest

Instructions

  1. Prepare the Strawberries: Wash and hull the strawberries, chop them into small pieces, and set aside to drain excess juice.
  2. Make the Filling: In a large mixing bowl, combine cream cheese and confectioners’ sugar until smooth. Gently fold in the whipped cream and strawberry pieces until well blended.
  3. Form the Truffles: Use a small cookie scoop or your hands to roll tablespoon-sized portions of the mixture into balls. Place on a parchment-lined baking sheet. Chill truffles in the refrigerator for at least 1 hour.
  4. Prepare the Coating: Melt the white chocolate in a microwave-safe bowl, stirring every 20 seconds until smooth. Allow to cool slightly.
  5. Coat the Truffles: Dip each chilled truffle in melted white chocolate, letting excess drip off before returning to the baking tray.
  6. Finish with Shortcake Crumbs: While the chocolate is still wet, sprinkle with crushed shortcake or cookie crumbs.
  7. Chill Again: Allow coated truffles to set in the refrigerator for about 30 minutes until chocolate hardens.
  8. Serve: Serve chilled or at room temperature on a beautiful platter.

Notes
