Description

A quick and flavorful dish featuring chewy rice noodles tossed with a robust sauce, fresh vegetables, and your choice of protein.


Ingredients

  • 8 oz rice noodles
  • 1 cup protein (chicken, shrimp, or tofu)
  • 1 cup bell peppers, sliced
  • 1 cup broccoli florets
  • 1/2 cup onions, sliced
  • 1/4 cup fresh basil
  • 3 cloves garlic, minced
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp brown sugar
  • 1 tbsp chili paste (to taste)
  • 1 lime, juiced
  • 2 tbsp oil (for cooking)

Instructions

  1. Soak the rice noodles in hot water until softened (20-30 minutes).
  2. While the noodles soak, chop the vegetables and protein, and mince the garlic.
  3. In a large skillet or wok, heat the oil over medium-high heat until shimmering.
  4. Add minced garlic and stir-fry for 30 seconds until fragrant.
  5. Add your chosen protein, cooking until browned and just cooked through.
  6. Toss in the vegetables and stir-fry for about 3-5 minutes until slightly softened.
  7. Drain the soaked noodles and add them to the wok, mixing thoroughly.
  8. Pour in soy sauce, oyster sauce, and brown sugar, and stir to combine.
  9. Add chili paste and lime juice to taste, mixing everything for an additional minute.
  10. Plate the noodles topped with fresh basil and serve immediately.

Notes

Adjust spice level by adding more or less chili paste. Use leftover vegetables for customization.
