- 16 large button mushrooms or cremini, cleaned and stems removed
- 8 oz cream cheese, softened
- 1/2 cup sour cream
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh thyme, chopped
- 1/2 cup grated Parmesan cheese
- 1 cup breadcrumbs (panko preferred)
- 1 tbsp olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Gently wipe the mushrooms clean and remove the stems. Finely chop the stems and set aside.
- In a skillet, heat olive oil over medium heat. Add the chopped mushroom stems and minced garlic, sautéing until softened, about 3-5 minutes.
- In a mixing bowl, blend cream cheese, sour cream, sautéed mushrooms, Parmesan cheese, fresh herbs, and seasonings. Stir until fully combined.
- Spoon the mixture into the mushroom caps, pressing down slightly to pack them.
- Sprinkle breadcrumbs on top for a crispy texture.
- Place stuffed mushrooms on a baking sheet and bake for 20-25 minutes, until golden brown and bubbling.
- Let cool slightly before serving with pita chips or fresh veggies.

Use fresh herbs for better flavor. Adjust seasoning based on taste before baking.
