  • 16 large button mushrooms or cremini, cleaned and stems removed
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh thyme, chopped
  • 1/2 cup grated Parmesan cheese
  • 1 cup breadcrumbs (panko preferred)
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Gently wipe the mushrooms clean and remove the stems. Finely chop the stems and set aside.
  3. In a skillet, heat olive oil over medium heat. Add the chopped mushroom stems and minced garlic, sautéing until softened, about 3-5 minutes.
  4. In a mixing bowl, blend cream cheese, sour cream, sautéed mushrooms, Parmesan cheese, fresh herbs, and seasonings. Stir until fully combined.
  5. Spoon the mixture into the mushroom caps, pressing down slightly to pack them.
  6. Sprinkle breadcrumbs on top for a crispy texture.
  7. Place stuffed mushrooms on a baking sheet and bake for 20-25 minutes, until golden brown and bubbling.
  8. Let cool slightly before serving with pita chips or fresh veggies.
