- 1 Pork Roast (shoulder or loin)
- 1 cup Apple Cider (no-sugar-added)
- 2 Fresh Apples (sliced Granny Smith or Honeycrisp)
- 1 Onion (yellow, sliced)
- 4 cloves Garlic (minced)
- 8 oz Mushrooms (cremini or shiitake)
- 2 sprigs Fresh Rosemary
- 2 sprigs Fresh Thyme
- 2 tbsp Olive Oil
- Salt and Pepper (to taste)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large, oven-safe skillet, heat a few tablespoons of olive oil over medium-high heat. Season the pork roast generously with salt and pepper, then sear it on all sides until golden brown, roughly 4-5 minutes per side.
- Remove the roast and set it aside. In the same skillet, add sliced onions and sauté until translucent. Toss in minced garlic and cook until fragrant, about 30 seconds. Add mushrooms and cook until browned.
- Return the pork to the skillet, adding apple cider, sliced apples, and fresh herbs.
- Transfer the skillet to the preheated oven and roast for about 90 minutes to 2 hours, basting occasionally. The internal temperature should reach 145°F (63°C).
- Once done, remove from oven and let it rest for at least 10 minutes before slicing.
- Slice the pork roast and serve it with the cooking liquid, roasted apple slices, and mushrooms.
Notes
For best results, use a meat thermometer to check for doneness and let the roast rest before slicing to retain juices.
