- 2 cups sweet apple cider
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1 sweet onion, chopped
- 4 cloves garlic, minced

- 1 cup chicken broth
- Salt and pepper, to taste

Instructions
- Preheat your oven to 350°F (175°C).
- Rub the pork roast with salt, pepper, garlic, and olive oil.
- In a heavy skillet or Dutch oven, sear the pork roast on all sides until browned.
- In a bowl, mix apple cider, chopped onion, brown sugar, and herbs.
- Deglaze the pan with the apple cider mixture, scraping up browned bits.
- Return the pork to the pan and add chicken broth to keep it moist.
- Cover and roast in the oven for 1.5 to 2 hours, basting every 30 minutes.
- Remove the cover in the last 20 minutes to thicken the glaze.
- Check the internal temperature, aiming for 145°F (63°C).
- Let the pork rest for 10 minutes before slicing.
- Serve drizzled with the apple cider glaze.
