  • 1 cup chicken broth
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Rub the pork roast with salt, pepper, garlic, and olive oil.
  3. In a heavy skillet or Dutch oven, sear the pork roast on all sides until browned.
  4. In a bowl, mix apple cider, chopped onion, brown sugar, and herbs.
  5. Deglaze the pan with the apple cider mixture, scraping up browned bits.
  6. Return the pork to the pan and add chicken broth to keep it moist.
  7. Cover and roast in the oven for 1.5 to 2 hours, basting every 30 minutes.
  8. Remove the cover in the last 20 minutes to thicken the glaze.
  9. Check the internal temperature, aiming for 145°F (63°C).
  10. Let the pork rest for 10 minutes before slicing.
  11. Serve drizzled with the apple cider glaze.
