Ingredients

  • 1 cup all-purpose flour (or gluten-free flour)
  • 1 ½ cups milk
  • 3 large eggs
  • 2 tablespoons sugar
  • A pinch of salt
  • 2 tea bags Earl Grey tea
  • Fresh peaches, sliced
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract

Instructions

  1. In a mixing bowl, whisk together flour, milk, eggs, sugar, and salt. Let it rest for 30 minutes.
  2. Brew 2 tea bags of Earl Grey in 1 cup boiling water for 5 minutes and let it cool.
  3. Heat a non-stick skillet over medium heat, lightly grease with butter. Pour in ¼ cup of batter, swirling to coat the skillet. Cook until edges lift, about 1–2 minutes. Flip and cook for another minute. Repeat until all batter is used.
  4. In a bowl, whisk cream, sugar, and vanilla until soft peaks form.
  5. Spread a layer of whipped cream on each cooled crepe, add peach slices, and drizzle brewed Earl Grey over layers. Roll crepe tightly and place seam side down.
  6. Refrigerate for at least 1 hour, then slice and serve with more peaches and whipped cream if desired.
