- 4 boneless chicken breasts
- 1 cup sundried tomatoes
- 2 cups fresh spinach
- 1 cup cream cheese

- 1 tsp fresh oregano (optional)
- 2 tbsp olive oil

Instructions
- Preheat your oven to 375°F (190°C).
- In a medium bowl, combine cream cheese, chopped sundried tomatoes, fresh spinach, minced garlic, and herbs. Mix until well-combined.
- Prepare the chicken by making pockets in each breast using a sharp knife.
- Stuff each chicken pocket with the sundried tomato and spinach mixture.
- In a skillet, heat olive oil over medium-high heat and sear the stuffed chicken for 3-4 minutes on each side until golden brown.
- Transfer the chicken to a baking dish, season with salt and pepper, and bake for 25-30 minutes or until the internal temperature reaches 165°F (75°C).
- Let it rest for a few minutes, then slice and serve, garnished with fresh herbs if desired.
