  • 1 tsp fresh oregano (optional)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, combine cream cheese, chopped sundried tomatoes, fresh spinach, minced garlic, and herbs. Mix until well-combined.
  3. Prepare the chicken by making pockets in each breast using a sharp knife.
  4. Stuff each chicken pocket with the sundried tomato and spinach mixture.
  5. In a skillet, heat olive oil over medium-high heat and sear the stuffed chicken for 3-4 minutes on each side until golden brown.
  6. Transfer the chicken to a baking dish, season with salt and pepper, and bake for 25-30 minutes or until the internal temperature reaches 165°F (75°C).
